Kendall College is thrilled to offer outstanding weekend and summer camp opportunities for the aspiring chef, next top hotel general manager, or creative genius in your family!
Whether you love to cook, want to become an entrepreneur, or your childhood dream is to run your own hotel or restaurant, Kendall College Camps are a great place to start. Introductory and advance camps at our Riverworks campus are available to students between the ages of 13 -18.
Summer Camp Descriptions
Basic Culinary
Every successful chef begins with the basics! Experience life as a culinary student as you learn the essentials of professional cooking: knife skills, kitchen terminology, safety, and sanitation. You’ll work in state-of-the-art kitchens making dishes like multi-colored fresh pasta, ravioli, and bass baked in banana leaves. At the end of the 5-day camp, you’ll use fruit carving techniques to create centerpieces for the closing banquet, a luncheon prepared entirely by culinary campers for their families and friends.
Advanced Culinary Camp
Take the next step in your culinary education! Build on the skills and principles you learned in basic culinary camp to make more complicated dishes—sausage meat, stuffed chicken ballotine, bass with fresh Thai curry, vegetable terrines, cold soup, and more. Under the guidance of our expert faculty, you’ll prepare the closing banquet at the end of the week, served in our fine dining room to family and friends. Pre-requisite: Basic Culinary Camp
Basic Baking and Pastry Camp
Think dessert is the best part of the meal? You won’t want to miss this—a comprehensive introduction into the world of professional baking and pastry. Work in our exceptional pastry kitchens and our specialized chocolate and sugar kitchen as you learn the basics of baking like the pros—from yeast dough and meringue to fruit tartes, éclairs, quick breads, and cakes. At the end-of-the-week award banquet, you’ll showcase your creations at a spectacular dessert buffet.
Advanced Baking and Pastry Camp
Sweeten up your dessert-making skills with this intensive week-long camp. Expert chefs will teach you to make delectable mousse-based cakes, ice creams, chocolate decorations, savarin, molten chocolate desserts, and more! You’ll also attend an advanced sugar pulling and blowing demonstration. Your delectable desserts will take center stage at the campers’ closing banquet in the fine dining room. Pre-requisite: Basic Baking and pastry.
(NEW) Backpack to Briefcase (Business & Hospitality Camp)
This fun yet educational camp will focus on various business concepts and skills required in today’s business world. Your future CEO will learn leadership, teamwork, business/social etiquette and the art of networking. Campers will gain an understanding of different career paths in both the business and hospitality industry using hands on techniques and experiences.
Dates for the camps are as follows:
June 23-27,
July 7-11, 14-18, 21-25, 28- August 1
August 4-9, 11-15
Camp is in session from 8:30am – 4:30pm each day, followed by evening activities from 5:30pm – 9:30pm for full time campers. If registered by February 22nd, 2008 campers receive a $50 discount. A $150 deposit must be received by that date in order to receive discount.
