Jeffrey Catrett, Dean - Kendall College Les Roches School of Hospitality Management

Jeffrey Catrett has served as the Dean of the Ecole hôtelière de Lausanne and the Dean of Academics at the Les Roches Swiss Hotel Association School of Hotel Management in Bluche, Switzerland, lecturing to undergraduate upperclassmen and graduate students in a variety of subjects including Information Technology and Strategic Management.

He turned his attention to academics after a ten-year management career in hotel operations with such companies as Omni International and Swissôtel. His professional experience in hospitality and hospitality education spans twenty-five years and four continents.

Mr. Catrett holds a BA from Middlebury College and an MMH from the Cornell University School of Hotel Administration, and has been published in major hospitality texts and journals including the Cornell H&RA Quarterly and the Surrey Quarterly.

Steven Grand Pré, Maître d'hôtel Instructor
School of Hospitality Management

Steven Grand Pré has been involved in foodservice for over 30 years. He has held many front-of-the-house positions at properties in Chicago (l'Escargot, La Mirabelle, Cricket's), Los Angeles, and Italy. He helped launch the award-winning Seasons Restaurant at the Four Seasons Hotel-Chicago. The United Methodist Church recognized Mr. Grand Pré  as an Exemplar Teacher in 2001. He belongs to CHRIE (Council on Hotel, Restaurant, Institutions, Educators) and AIWF (American Institute/Wine and Food) and is also Kendall’s webmaster.

Julie Hellyer, Adjunct Instructor
School of Hospitality Management

Julie Hellyer holds an M.S. in Management of Public Services from DePaul University and a B.S. in Home Economics – Family Services from Eastern Illinois University. She has served in a number of management positions in deluxe hotels throughout Chicago, including Reservations Manager at the Drake Hotel, Director of Front Office Operations for the Fairmont, and Assistant Director of Housekeeping at the Peninsula Hotel. She was most recently Executive Housekeeper of the Sofitel Chicago Water Tower for Groupe Accor. Ms. Hellyer has maintained part-time teaching positions at college level throughout her career.

Isidore Kharasch, Adjunct Instructor
School of Hospitality Management

Isidore Kharasch is a graduate of The Culinary Institute of America, a veteran of the U.S. Army (Food Inspection/Quality Assurance Specialist), a former Executive Chef of Harvard University, and a graduate of Kendall College, holding a B.A. in Hospitality Management.  Mr. Kharasch is the President of Hospitality Works, Inc., an operational foodservice consulting and training firm. His clients include companies that he develops from financials to concept to inception.  Mr. Kharasch has worked with over four hundred foodservice operations in twenty-four states, as well as Canada and England.  He has also served as an adjunct faculty member at Ecole hôtelière de Lausanne in Lausanne, Switzerland as well as other colleges and culinary schools. Mr. Kharasch has consulted with casinos, independently owned restaurants, night clubs, hospitality companies, private clubs, colleges and universities, architectural, accounting and engineering firms as well.

Chris Letchinger, Assistant Professor
School of Hospitality Management

A native of France, Chris Letchinger received a BA in History from l'université Paris-Sorbonne (Paris IV) and an MBA from Southern Methodist University in Dallas, Texas. She pursued her career in the hospitality industry where her specialty became the overhauling of financially troubled operations. In addition, she participated in the design or remodeling of a dozen establishments and opened seven restaurants. She began teaching at Kendall in 1988 where she focuses on accounting and cost control courses. The United Methodist Church recognized her as an Exemplar Teacher in 1990. Ms. Letchinger's interests encompass feasibility studies, cost control and the reasons for the failure of restaurants.

Michel Maloiseau, Chef Instructor
School of Hospitality Management

Michel Maloiseau joined Kendall College after a decade with Four Seasons Hotels and Resorts including five years at the Ritz-Carlton Chicago and Carlton Club. He served as an executive of Maxim's Restaurant in Chicago and was responsible for designing and offering consultation to half a dozen restaurants in Chicago and the suburbs. Chef Maloiseau was the private chef of French President Charles de Gaulle, a charter member of the Vatel Club du Midwest, and an associate with the Bocuse d'Or Competition.

Ted Mandigo, Assistant Professor
School of Hospitality Management

Ted Mandigo, CPA is a graduate of the Cornell University School of Hotel Administration and holds an MBA from Loyola University.  He is past president of the Illinois CPA Society, sits on the national council of the AICPA, and helped to found the International Society of Hospitality Consultants.  With over 30 years of consulting experience, he is frequently quoted in local and national publications regarding the local market and the state of the industry in general.  During his career, Mr. Mandigo has conducted more than 1,000 market feasibility studies and consulting analyses for the hospitality industry including: a feasibility study for the Ritz Carlton Chicago; moderation of the Choice Hotels Impact Summit; consulting for Tavern on the Green and Windows on the World; a market feasibility analysis for the Hammond casino; impact analysis for Best Western and Marriott; and litigation support services for the Hong Kong Hilton.  He has conducted numerous national and international programs and seminars.

Sapna M. Mangal, Assistant Professor
School of Hospitality Management

Sapna M. Mangal brings more than a decade of international hospitality and teaching experience to Kendall. Prior to graduating from the Singapore Hotel Association Training and Educational Center, she successfully completed a management training program at Singapore’s Omni Marco Polo Hotel.  Ms. Mangal launched her hospitality career in banquet sales and management at a university club with over 5000 members.  After relocating to the U.S., she earned a Bachelor of Science in Hotel Management at the University of North Texas while interning at the Wyndham Anatole in Dallas, one of the largest convention hotels in the United States. She was also involved in event management for a number of community organizations and hospitality industry groups.  Ms. Mangal earned an M.S. in Hotel and Restaurant Management with a minor in Marketing in 1994. Her thesis focused on measures of service quality and the perceptions that upscale hotel property managers have of them.

Ms. Mangal returned to Singapore as a Program Manager for Irvine, California-based multi-national hotel marketing consulting company Hospitality Marketing Concepts.  Her consulting assignments included the Pan Pacific Kuala Lumpur, Pan Pacific Singapore, Omni Marco Polo Singapore, Djakarta Hilton, and the Shanghai Hilton.  Later she returned to the University of Houston to earn an M.B.A. with a Management Information Systems concentration.  Prior to joining Kendall’s faculty, she taught at Sam Houston State University in Huntsville, Texas.

Philip Mott,  Assistant Professor
School of Hospitality Management

Philip Mott has been involved in the restaurant and hospitality industry for the last twenty- five years.  Mr. Mott received a BA in history from the State University of New York at Buffalo and an MBA in Finance from The University of Chicago. He began in the industry by helping start a café with his brother in Hyde Park in 1981. This venture grew to fifteen cafes, a catering company, a bakery and commissary, and a vending company. Mr. Mott helped to found Park Restaurants, which operates North Pond, the award winning restaurant in Lincoln Park. In addition, Mr. Mott has worked in the investment-banking field working on a futures options risk analysis program and setting up a venture capital fund. He also was the Director of Operations for a fine wine distributor. He has done independent consulting for many years and served as an advisor at a Small Business Administration / Small Business Development Center. Mr. Mott's restaurant career includes being proprietor of Le Français, the noted French restaurant in Wheeling, Illinois. During his tenure, Le Français received the Five Diamond Award from AAA, the Mobil Four Star award and Four-Stars from the Chicago Tribune.  He has also worked for Bennigans, Levy Restaurants and the National Restaurant Association in Washington, D.C. Mr. Mott  serves on the Chicago Public Schools Taskforce for Healthy Eating and with the Healthy Schools Campaign.

Alexander Cocron, Dean - Kendall College School of Business Management

Sascha Cocron holds an MBA with honors from The University of Chicago, and received his B.A. in philosophy and mathematics from St. John’s College, Annapolis.  Mr. Cocron has extensive experience in corporate strategy consulting and in entrepreneurial ventures, having been a founding member of two venture-funded high technology start-ups. Mr. Cocron was a Principal at Mercer Management Consulting, one of the world’s premier strategy consulting firms.  Stationed in the London and Washington, DC offices, Mr. Cocron consulted to senior executives of Global 1000 clients in the United Kingdom, Germany, Austria, France, the Netherlands, Australia, Canada, and the United States.  His past casework experience includes strategy development and M&A advisory work in numerous industries including: telecommunications, oil and gas, high technology manufacturing, information services, professional services, hospitality, and entertainment. In addition to his consulting work, Mr. Cocron was in charge of professional staff training for Mercer’s Washington office, and developed and instructed courses in marketing, strategy, micro-economics, and corporate finance to new Analyst (undergraduate) and Associate (MBA-level) hires. A native of Austria, Mr. Cocron is bilingually fluent in German and English.

Denise M. Stauder, Adjunct Instructor
School of Hospitality Management

Denise M. Stauder is a certified meeting professional who brings over thirty years’ experience with The Tribune Company, Northern Illinois University, and a number of non-profit organizations as well as her own consulting business. Her academic credentials include a BA in Political Science from Maryville University in St. Louis, and an MA in Political Science from St. Louis University. Ms. Stauder was associated with the Chicago Tribune and Tribune Company for over 25 years in such positions as Public Relations Associate, Assistant Editor of Lifestyle, and Assistant to the Editorial Page Editor, to the Editorial Operations Editor and to the Managing Editor (of Chicago Today newspaper– also owned by the Tribune), as Special Events Coordinator and as Marketing Buyer. She organized and was project manager for over 200 public, customer, and employee or community events per year that were presented or sponsored by the Chicago Tribune and the Tribune Company. These events varied in size from small executive events to large public events of over 50,000. Later, she served as Program and Marketing Manager for Northern Illinois University’s Division of Continuing Education working primarily in the areas of online education and conference management. She was awarded a Life membership with Meeting Professionals International in 2002, is the recipient of MPI’s Planner of the Year Award from the Chicago chapter in 1995 and has held a number of volunteer positions for MPI both locally and internationally. She also was one of the founders of MPI’s Corporate Special Interest Group. Ms. Stauder has received the Alumni Volunteer Achievement Award from Maryville University in 2002, and the American Lung Association of Metropolitan Chicago awarded her their highest award, the DeYoung Medal, in 2000. Currently she is president of DMS Marketing and is a partner in CD Newsletters.

Christopher Quirk, Chef Instructor
School of Hospitality Management

After graduating from The University of Wisconsin-Madison with a BA degree in English Literature and with 7 years in the industry, Chris Quirk received an AOS from the New England Culinary Institute in Montpelier, Vermont.  He served as Executive Sous Chef at the Hôtel Sofitel in Redwood City, California under Chef Gilbert Drouelle, (Maître cuisinière de France).

Chef Quirk returned to Wisconsin and opened The Antlers, a restaurant on Lake DuBay in central Wisconsin. His desire to teach his culinary skills to young chefs led him to embark on his teaching career as Chef Instructor at The New England Culinary Institute. Chef Quirk later moved to Tortola, British Virgin Islands to develop and open a new Culinary Campus at the H. Lavity Stoutt Community College.
Returning to the US in 2003, he served as Sous Chef for the Westmoreland Country Club in Wilmette before joining the faculty at Kendall College.

Pamela Stoner, Instructor
School of Hospitality Management

Pamela Stoner is a graduate of Kendall College with an AAS in Culinary Arts and over fifteen years of restaurant management.  Ms. Stoner has served in a number of general management positions at restaurants in Chicago’s Lincoln Park area including the North Pond Café and Bistrot Margot. As an entrepreneur and chef, she operated a 9-room inn with a 45-seat fine dining restaurant on the southern shores of Lake Michigan.

Ms. Stoner rejoined Kendall College in 2004 as an instructor, teaching dining room service. Since assuming her responsibilities on the Kendall faculty, Ms. Stoner has demonstrated her innovative approach  to service by introducing lectures based on ”Zingerman’s Guide to Giving Great Service”, by Ari Weinzweig, and by implementing training in wine, beer, and spirits.
