The curriculum combines the Art of Hospitality – service, culinary arts, design, concept development, and creativity, with the Science of Management - marketing, human resources, operations, technology, financial management, and strategic management. All courses and internships are designed to cultivate you for a leadership position. By concentrating on the decision-making skills and knowledge needed for large hotel operations, world-class foodservice, and state-of-the-art meeting venues, Kendall prepares you to manage and lead in any hospitality-related field. Graduates from the Kendall Les Roches School of Hospitality Management receive a Bachelors of Arts in Hospitality Management from Kendall College.

Operations
In the hospitality management program, you gain experience in the operational elements of the hospitality industry with practice-based realistic exercises and computer-based simulations designed to immerse you in the aesthetics, culture and customer focus of hospitality, to develop your poise and confidence through individual accomplishment and teamwork, to provide you with the skills knowledge and detail orientation to manage future employees who will put these skills to use on a daily basis, and to let you understand more fully the quality of working life issues your future employees will raise. You will explore the fundamentals of culinary arts, food and beverage service, purchasing, receiving and storing, reception, housekeeping, and engineering in the College’s state-of-the-art kitchens, award-winning dining room open to the public, computer facilities and unique Hyatt Hotel Suite, using the newly renovated Riverworks campus as your living laboratory. At the same time, you will develop the critical eye and decision-making capabilities of the future manager, learning to differentiate quality and create value propositions.
Management
The focus of the hospitality management program is, however, managerial as the title implies. You will pursue a complete management curriculum geared specifically to the hospitality industry. Included are courses in rooms and food and beverage management, hospitality marketing, hospitality human resources management, hospitality accounting, and financial management as it relates to feasibility, real estate and multi-unit systems. A strategic management cycle using hospitality cases and simulations serves as the capstone activity.
Program-Specific General Education
In addition to Kendall’s core general education requirements and general education electives, a number of general education courses with implications for hospitality enrich the program. Students develop skill in a foreign language, gain awareness of environmental issues impacting hospitality development, become familiar with the fine arts and the latest design trends, acquire statistical modeling tools, and are acquainted with micro- and macroeconomic factors impacting the business environment.
Concentrations
Concentration courses allow students to specialize in one business segment of the hospitality industry gaining a depth of understanding to complement the program’s general depth. Advanced courses are offered in Hotel Management, Food and Beverage Management, and Meetings and Convention Management.
Concentration in Hotel Management
With more than 45,000 hotels in 175 markets, ranging from small bed and breakfast establishments to massive convention and casino hotels, the hotel industry in the U.S. and worldwide is experiencing unprecedented growth. Currently, the demand for managerial candidates far outpaces the supply of qualified applicants. With this concentration, Kendall prepares you for general management with a specific emphasis on rooms management.

Concentration in Convention and Meeting Management
Convention and meeting planning is one of the fastest growing segments of the hospitality industry. Associations spend in excess of $54 billion annually, holding more than 215,000 meetings that range from seminars to city-wide conventions. Boasting Navy Pier and McCormick Place, Chicago is the largest trade show and convention venue in the world. With this concentration, Kendall prepares you to manage convention and visitors bureaus, event planning companies, and special events activities.

Concentration in Food and Beverage Management
Foodservice is the largest, most diverse sector of the hospitality industry. Growing at an average rate of 7.6% yearly, foodservice involves both commercial and noncommercial operations that provide food and beverage in a variety of settings, including restaurants, hotels, casinos, national parks, catering companies, schools, universities, and hospitals. Kendall prepares you for key management positions in restaurants, institutional foodservice, catering, and foodservice consulting.
