Chicago Michelin Guide Restaurants rank Kendall College the No. 1 Chicago program for preparing students for culinary arts careers.
This industry research was designed, supervised, and implemented by one of the most respected market research firms in the industry, ORC International. Interviewing was completed via telephone in April and May, 2011, with restaurants included in the Michelin Guide Chicago 2011. To maintain objectivity, the interviewing process did not reveal Kendall College to be the sponsor of the study until the very last question.
Who was interviewed?
In the Chicago area, 338 restaurants are listed in the Michelin Guide. Multiple attempts were made to call and interview a qualified representative of all 338 restaurants on the list. In most cases, up to five attempts were made to call a restaurant, and in some cases more than five attempts were made. 71 restaurants were interviewed in this research.
Upon reaching a restaurant, interviewers first attempted to speak to the Executive Chef or Manager of the restaurant. If the Executive Chef or Restaurant Manager's participation could not be obtained, interviewers asked to speak to another individual who was personally involved in hiring decisions for positions that would typically be filled by culinary school graduates.
What was asked?
Respondents were read a randomized list of local, Chicago-area culinary schools and asked to “identify the program you would consider the number one local program in how well it prepared students to succeed in the culinary arts industry.” In addition to the culinary schools listed, respondents were encouraged to rank other local schools they were aware of. All but two respondents were aware of at least three schools on the list.
What were the results?
Of the 71 restaurants interviewed, 42 (59.2%) named Kendall College as the number one Chicago-area program in how well it prepared students to succeed in the culinary arts industry. No other local culinary school was selected number one by more than 6 restaurants (8.5%), a statistically significant finding at the 99% confidence interval.
Additionally, a non-response bias was not noted in this research. Respondents who initially did not respond to ORC’s inquiries and then did (after an increase in the incentive) responded similarly to those who responded initially.

Chicago’s leading hotels rank Kendall College the No. 1 Chicago program for preparing students for hospitality management careers.
This industry research was designed, supervised, and implemented by one of the most respected market research firms in the industry, ORC International. Interviewing was completed via telephone in April and May, 2011, with top-rated Chicago-area hotels as compiled from Conde Nast, Frommer’s, U.S. News & World Report and the Michelin Guide Chicago 2011. To maintain objectivity, the interviewing process did not reveal Kendall College to be the sponsor of the study until the very last question.
Who was interviewed?
A total of 257 Chicago-area hotels were represented across these four sources. In order to create a reasonable system for classifying hotels as “top-rated”, the ranking systems of the four sources were consulted. As the sources rank hotels differently, the 257 hotels were each given a total composite score consisting of the sum of its Conde Nast, Frommer’s, U.S. News & World Report and Michelin Guide Chicago 2011 ratings*. The 86 hotels on the list that had a composite score of “4” or higher were classified as “top-rated” hotels for the purposes of the study. Multiple attempts were made to call and interview a qualified representative of all 86 hotels on the list. In most cases, up to five attempts were made to call a hotel, and in some cases more than five attempts were made. 45 hotels were interviewed in this research.
Upon reaching a hotel, interviewers first attempted to speak to the Manager of the hotel. If the Hotel Manager's participation could not be obtained, interviewers asked to speak to another individual who is personally involved in decisions about hiring for positions that would typically be filled by hospitality school graduates.
What was asked?
Respondents were read a randomized list of local, Chicago-area hospitality management schools and asked to “identify the program you would consider the number one local program in how well it prepared students for managerial positions in the hospitality profession.” In addition to the hospitality schools listed, respondents were encouraged to rank other local schools they were aware of. All respondents knew at least three schools on the list.
What were the results?
Of the 45 hotels interviewed, 22 (48.9%) named Kendall College as the number one Chicago-area program in how well it prepared students for managerial positions in the hospitality profession. No other hospitality school was selected number one by more than 7 hotels (15.6%), a statistically significant finding at the 99% confidence interval.
Additionally, a non-response bias was not noted in this research. Respondents who initially did not respond to ORC’s inquiries and then did (after an increase in the incentive) responded similarly to those who responded initially.
*More Detail on Hotel Ranking Systems:
US News: The US News site includes two ratings systems. The first is a star system (solely used in this research), which ranks the hotels based on a 1-5 star ranking system, based on the quality and level of service offered by the hotel. The second scale contains average user rankings.
Frommers: Frommer's uses a three-star system, with 3 stars representing the highest level of service, and 1 star representing the lowest level.
Conde Nast: Conde Nast uses a ranking system with a top score of 100, based on reader feedback. Top scoring hotels usually have a score of 90 points or higher. Since the Conde Nast list is the most exclusive (as a global list, it includes very few U.S. hotels), in order to treat these ratings comparably to the other rating systems, we gave the four U.S. hotels listed a score of “5”.
Michelin: The Michelin Guide Chicago 2011 uses a five-point scale to rank the "comfort" of the hotel, with five stars indicating the top level of comfort. These ratings are generated by Michelin Guide reviewers.
