Kraft Foodservice Awards Scholarships in Future Chefs of GREY POUPON Student Culinary Competition

Kraft Foodservice awards $10,000 in scholarships in the Future Chefs of GREY POUPON Student Culinary Competition at Kendall College.

Chicago, Ill. (May 11, 2011)—
Kraft Foodservice awarded $10,000 in scholarship money to four students at Kendall College during the Future Chefs of GREY POUPON Student Culinary Competition held at the culinary school’s campus on May 6.  Marco Bahena received the first-place prize of a $5,000 scholarship for his recipe, Grey Poupon Honey-Glazed Cod with Barley-Mushroom Salad, Smoked Yogurt, Minted Pea Puree and Pancetta Crisp.  As the first-place winner, in addition to a $5,000 scholarship, Marco also has the chance to be featured in a Kraft Foodservice trade advertisement.

The competition challenged Kendall College culinary students to create an extraordinary example of a health-inspired fish dish.  Students were asked to take the concept of a fish dish to a new level and develop exciting and unique recipes. Additionally, each recipe had to highlight GREY POUPON Classic Dijon or GREY POUPON Country Dijon Mustard as the featured ingredient.

Marco’s Grey Poupon Honey-Glazed Cod recipe impressed the judges with its creative use of GREY POUPON as a marinade and a finishing glaze for the cod and as an enhancer for his Barley-Mushroom Salad.

This is not the first culinary competition for Marco, who hails from Vernon Hills, IL.  Most recently, he competed in the S.Pellegrino® Almost Famous Chef® Competition. There he won both the Overall and Signature Dish titles.  Marco is a self-confident chef with a deep love for food who believes that he can accomplish anything he sets his mind to. He’s always challenging himself to learn new cooking techniques while pushing his own boundaries.  After graduating from Kendall College, Marco plans to continue working and learning about modern and historical food theory and techniques in Chicago.

Recipes developed by the other student finalists who were also awarded scholarship prizes were these:  Grilled Cobia with Spring Vegetables and Quinoa Salad, the second-place recipe by Anna Marie Sosi, for which she was awarded $3,000; Pretzel & Mustard-Crusted Whitefish, which included wilted mustard greens with warm mustard & beer dressing, whole-wheat mustard gnocchi, turnip puree and cranberry mostardai, for which Greg Hageli was awarded third place and $1,000; Crispy Skin Bass with Dijon Mustard Velouté and Mustard Greens, which earned John Saccomando fourth place and a $1,000 scholarship prize.

The judges for the competition included Chef Joshua Linton, Owner of Joshua Tree Spice Studio; Chef Megan Neubeck, Sous Chef at Terzo Piano in Chicago; and Chef Renee Zonka, Dean, School of Culinary Arts of Kendall College.  Students’ recipes were judged on taste and use of GREY POUPON, along with creativity and appearance.

Now in its sixth year, the annual Chefs of GREY POUPON program celebrates the inspiration that GREY POUPON Dijon Mustard brings to top chefs and to promising culinary students. The highlight of the program is the Future Chefs of GREY POUPON Student Culinary Competition. The 2011 competition is composed of six distinct on-campus competitions, bringing scholarship opportunities to students across the country.
