      <title>Faculty Speak about Green Marketing at PCMA’s 56th Annual Convening Leaders Conference</title>
            <description>Kendall College School of Hospitality Management Faculty Speak about Green Marketing at PCMA&amp;rsquo;s 56th Annual Convening Leaders ConferenceChicago&amp;mdash;January 27, 2012&amp;mdash;Dr. Sue Tinnish, assistant professor, and Sapna Mangal, associate professor, both at the Kendall College School of Hospitality Management, presented at the Professional Convention Management Association&amp;rsquo;s (PCMA) 56th annual Convening Leaders conference held earlier this month at the San Diego Convention Center. Their presentation, &amp;ldquo;More Than Green: Sustainable Meeting Marketing,&amp;rdquo; defined sustainable marketing, identified how a focus on sustainability impacts traditional marketing and outlined how participants can apply green marketing to their meetings and businesses.&amp;ldquo;We are honored that Dr. Tinnish and Ms. Mangal were invited to speak at this year&amp;rsquo;s Convening Leaders conference,&amp;rdquo; said Jeffrey Catrett, dean of the School of Hospitality Management at Kendall College. &amp;ldquo;Their expertise in marketing and green meetings provided conference attendees with a perspective on events in the holistic context of sustainability.&amp;rdquo;According to Tinnish and Mangal, sustainable marketing in relationship to meetings and tradeshows includes branding, messaging, meeting theme and communications materials. The pair presented convention&#45;goers with tips on how to incorporate sustainability into the RFP; how to leverage fair trade, local and recyclable products; how to use reclaimed, recycled, or rapid&#45;renewal materials; the importance of limiting the use of printed communications including signage, programs and handouts; and closing the sustainable loop on an event by recycling and repurposing supplies after the meeting.&amp;ldquo;Meetings are all about branding and communication. By bringing in the sustainable concepts and tactics we talk about, from name badges and signage to promotional products and beyond, we can help meeting planners reduce their carbon footprint while also contributing to a healthy bottom line,&amp;rdquo; said Tinnish.Tinnish received her M.B.A. from the University of Chicago and her Ph.D. in Organization Development from Benedictine University. Her industry recognition as a certified ROI Professional includes the MPI Hall of Fame (2009), MPI Presidents Award (2001&#45;2002), and MPI Chapter Manager of the Year (1999&#45;2000). She chairs the committee that established the new APEX/ASTM International standards for environmentally sustainable events, and served as the U.S. Chair for the International Standards Organization (ISO) effort to develop a worldwide sustainable events management system.Mangal has more than 15 years of international hospitality and teaching experience. She earned a B.S. in Hotel Management and an M.S. in Hotel and Restaurant Management from the University of North Texas, and received her M.B.A. from the University of Houston, Clear Lake.       <title>Student Takes Top Honors at Annual S.Pellegrino® Almost Famous Chef® Competition</title>
            <description>Kendall College School of Culinary Arts Student Takes Top Honors at Annual S.Pellegrino&amp;reg; Almost Famous Chef&amp;reg; North Central Regional CompetitionJennifer Kim Brings Third Consecutive Regional Win for Kendall CollegeChicago&#45;January 23, 2012&#45;Kendall College School of Culinary Arts student Jennifer Kim won the title of North Central Regional S.Pellegrino Almost Famous Chef at the fast&#45;paced, high&#45;pressure cooking competition held at Kendall on January 18, 2012. Kim, a native of Schaumburg, Ill., impressed the panel of judges with her creative signature recipe for chard&#45;rolled duck roulade. Now she advances to the finals competition to be held in Napa Valley, Calif., March 9&#45;12. This is the third consecutive year a Kendall student has won the regional competition.Kim competed against students representing culinary&#45;arts programs at five institutions in the North Central Region in an intense competition judged by local media and celebrity chefs David Posey of Blackbird, Joncarl Lachman of HB Home Bistro, Chris Macchia of Coco Pazzo and Jean Joho of Everest. Kim was announced the winner before an enthusiastic audience of local media, chefs and invited guests during the tasting reception.&#8220;Winning the competition is truly an honor,&#8221; said Kim. &#8220;The competition gave me the opportunity to connect with chefs I look up to, and it was great being able to receive critiques and pointers from the kitchen and chef judges.&#8221;At the 10th&#45;annual finals in March, Kim will compete against nine other regional winners from across the United States and Canada in front of a panel of food media, distinguished guests and renowned chefs during a three&#45;day cookoff. The overall winner will take the title, up to $22,000 in prizes and a paid apprenticeship from one of the participating chef judges.&#8220;Jennifer is continuing Kendall College&#8217;s winning streak with the S.Pellegrino Almost Famous Chef North Central Regional Competition,&#8221; says Renee Zonka, RD, CEC, CHE, dean of the Kendall College School of Culinary Arts. &#8220;The pressure will be on as she defends the national title at the finals.       <title>Faculty to Speak at Chicago Metro’s AEYC Opening Minds Conference</title>
            <description>Chicago&amp;mdash;January 23, 2012&amp;mdash;Two Kendall College faculty members will speak at the Chicago Metro Association for the Education of Young Children (AEYC) &amp;ldquo;Opening Minds&amp;rdquo; conference on January 26. Marsha Hawley, associate professor in the&amp;nbsp;School of Education, and Dr. Sheila Bartle, who recently retired as professor of English at Kendall College, have collaborated on their presentation: &amp;ldquo;Attention Higher Ed Faculty: Understand All the Factors of Working with Head Start Teachers Who Are Back In School.&amp;rdquo; Their address explores the unique challenges that face Head Start teachers and other adult learners who have been out of school for a while and have other family and work commitments.&amp;ldquo;We selected this presentation as a result of a yearlong study conducted by Dr. Bartle with Head Start teachers studying at Kendall College,&amp;rdquo; said Marsha Hawley. &amp;ldquo;What we found was that balancing the expectations of being a full&#45;time teacher in early childhood education while taking care of family members and going to college was an extremely complex situation. As a result, adult learners may need extra guidance and life balance support in addition to a traditional classroom environment.&amp;rdquo;Dr. Bartle&amp;rsquo;s study, &amp;ldquo;Head Start Scholars, a lot to say if you just ask,&amp;rdquo; is an analysis of sixteen self&#45;selected Head Start teachers attending Kendall College for their Bachelor of Arts degrees in Early Childhood Education. Dr. Bartle&amp;rsquo;s study examined the students&amp;rsquo; family life, experiences at Kendall College and the effect of their studies on their Head Start work with children and families. Based on her findings, Dr. Bartle has specific recommendations to share with other educators who may have adult learners in the classroom, including offering additional readiness and support to ease adult learners back into the classroom after a long absence.&amp;ldquo;Since its debut in 2005, the Head Start Scholars program at Kendall College has been a great success in helping Head Start teachers return to school to receive degrees in early childhood education,&amp;rdquo; said Dr. Paul Busceni, dean of the Kendall College School of Education. &amp;ldquo;I applaud Dr. Bartle for her research on the collective experience of adult learners who work full&#45;time in the same field they are studying. Both Dr. Bartle and Ms. Hawley are to be commended for sharing their teaching experiences at Kendall College with other educators of adult learners.&amp;rdquo;Dr. Bartle, a graduate of the College of St. Catherine and Loyola University of Chicago, has been teaching English for 40 years. During her five years at Kendall College, Dr. Bartle has served as associate dean of Early Childhood Education, director of faculty development, and professor of English in the general education program.Ms. Hawley is an experienced educator with diversified work experience in early childhood education and finance and resource development. She is a frequent speaker at industry events and author of several publications on infant toddler development and care for teachers.       <title>Kendall College Board of Directors Names Emily Williams Knight President</title>
            <description>Chicago&#45;January 17, 2012&#45;The Kendall College Board of Directors has named Emily Williams Knight president of Kendall College. Ms. Knight brings more than 15 years of experience in the education and hospitality industry to her role at Kendall College. Dr. Karen Gersten, who served as president of Kendall College since 2010, has been named Vice President of Academic Affairs in the Institutional Quality and Integrity Unit of the Global Products and Services Group at Laureate Education, Inc. Both positions are effective as of Monday, January 16, 2012.Ms. Knight joined Laureate Education, Inc. in 2011 as a vice president responsible for globally expanding access to the company&#8217;s hospitality management, culinary arts, and art and design programs. She previously was the CEO of New England University LLC. Ms. Knight formerly worked at Pearson Education for more than 10 years, most recently serving as vice president of marketing and sales strategies for Pearson Teacher Education and Development.Early in her career, Ms. Knight taught business courses at Montgomery County Community College in Pennsylvania. She also worked as an executive meeting manager at Marriott&#8217;s Key West Resorts in Florida.&#8220;Emily&#8217;s experience and leadership skills make her a natural choice for the role of president. The event featured keynote speaker Edwin Fuller, president and managing director, International Lodging Division, Marriott International, Inc., who shared his insights on the critical issues facing the hospitality industry. The event concluded with a question and answer session moderated by Jeff Weinstein, editor&#45;in&#45;chief of HOTELS Magazine.&amp;ldquo;We are thrilled with the response and industry participation,&amp;rdquo; said School of Hospitality Management Dean Jeffrey Catrett. &amp;ldquo;Our goal was to bring together industry thought leaders to analyze and discuss the trends and issues facing our unique industry.       <title>School of Education Dean Addresses Conference</title>
            <description>Dean of Kendall College School of Education Addresses Teacher Preparation Programs&amp;nbsp;at Illinois Association of Teacher Educator&amp;rsquo;s Annual ConferenceDr. Paul Busceni wants the new generation of teachers to have the tools and training needed to become more effective in the classroom
Chicago&amp;mdash;December&amp;nbsp; 22, 2011&amp;mdash;Dr. Paul Busceni, dean of the Kendall College School of Education, delivered a presentation on &amp;ldquo;Creating the Right Teacher Prep Program: What Makes Sense for Your School&amp;rdquo; at the Illinois Association of Teacher Educators (IATE) conference held at Bradley University in Peoria, Ill. His presentation focused on the key questions Schools of Education should consider when developing new teacher preparation programs. Kendall College adjunct faculty members Dr. Debra Van Maldegiam and Judy Dahl collaborated with Dr. Busceni on the presentation.
Dr. Busceni&amp;rsquo;s outlined the questions and processes that higher education institutions should follow to create stronger teacher preparation programming within their Schools of Education. His framework incorporates research, industry and market trends, with the goals of better preparing teachers to be more effective and competitive in the workplace. 
&amp;ldquo;The need for an education experience that nurtures and encourages learning in children is key for our schools,&amp;rdquo; said Dr. Busceni. &amp;ldquo;Adequate processes and programming are necessary to succeed in training a new generation of teachers. It has been an honor to share the Kendall College School of Education program development strategies, as well as our experience in providing future teachers with the knowledge, resources and commitment they need to become mentors and develop the young minds entrusted to them.&amp;rdquo;
Dr. Busceni has presented on a variety of topics including effective leadership in today&amp;rsquo;s schools, assessment of student learning, the student teaching experience, multicultural education, and team building and leadership in schools at conferences across the state, including the Archdiocese of Chicago&#8217;s Professional Development Convention, the Opening Minds Conference, the Illinois Institute of Art Professional Development Workshop Series and the Illinois Computing Education Annual Conference.
He is a member of Kappa Delta Pi (International Honor Society in Education), Association for the Supervision of Curriculum Development (ASCD), National Association of Secondary School Principals (NASSP) and National Association for the Education of Young Children (NAEYC). Dr. Busceni graduated from Northern Illinois University with a B.S. in Economics. He received an M.A. and an Ed.D. in Educational Leadership and Organizational Change from Roosevelt University.

      <title>Student Wins Weeklong Culinary Excursion to Taiwan</title>
            <description>Sophomore wows judges with &amp;ldquo;Taiwanese&#45;Style Three Cup Chicken&amp;rdquo;
Chicago&amp;mdash;December 21, 2011&amp;mdash; Kendall College School of Culinary Arts&amp;rsquo; student Tayler Moore, a 20&#45;year old sophomore pursuing his bachelor&amp;rsquo;s degree in culinary arts, won an all&#45;expenses&#45;paid weeklong trip to experience the foods and flavors of Taiwan in the first cookoff of its kind at Kendall College on Dec. 12. The competition, hosted by the Taipei Economic and Cultural Office (TECO) in Chicago, highlighted the official launch of Taiwan&amp;rsquo;s Government Information Office&amp;rsquo;s multilingual Web site celebrating Taiwan&amp;rsquo;s diverse foodways. Moore&amp;rsquo;s winning dish featured a chicken thigh fabricated to resemble a lollipop.&amp;ldquo;I feel blessed,&amp;rdquo; said an excited Moore when his win was announced. &amp;ldquo;I can&amp;rsquo;t wait to go to Taiwan.&amp;rdquo; Prior to the cookoff, Moore spent considerable hours researching Taiwanese cooking online, and developed a few possible entries before ultimately choosing &amp;ldquo;Taiwanese&#45;Style Three Cup Chicken.&amp;rdquo; The dish&amp;rsquo;s name comes from Moore&amp;rsquo;s use of a cup each of soy sauce, dry sherry and sesame oil, seasoned for depth and balance and reduced to create a rich sauce. For the judges, Moore presented the chicken&#45;thigh &amp;ldquo;lollipop&amp;rdquo; over a bed of pickled mustard greens, spooned sauce over the chicken, and crowned the dish with a vinaigrette&#45;dressed salad of Thai basil and cilantro. A drizzle of chili oil finished the presentation.Competing Kendall students had 90 minutes to prepare four portions of their entries, which were evaluated on flavor and proper seasoning, plate presentation, texture/mouthfeel and proper doneness. Although encouraged to elevate homestyle dishes and typical Taiwanese street foods to make them marketable within a fine&#45;dining setting, students were instructed to strive for authenticity of cooking methods and ingredients use. So impressed were judges with the overall caliber of entries that the top four dishes scored within a mere two&#45;point spread. (Two students tied for second place; the third&#45;place student scored two points below Moore.)Judging the cookoff were Baushuau Ger, director general of TECO in Chicago; Christopher Koetke, CEC, CCE, executive director of the Kendall College School of Culinary Arts and vice president of Laureate International Universities Center of Excellence in Culinary Arts; and Meilie Tsai of the Taiwan School in Lombard, Ill. Tsai, who will chaperone Moore in Taiwan during his weeklong culinary excursion, worked with competing Kendall College students weeks in advance of the cookoff to instruct on basic principles of classic and contemporary Taiwanese cooking.&amp;ldquo;Here at Kendall, we are totally committed to the education of our students, and this kind of competition is amazing for a lot of reasons,&amp;rdquo; Koetke said. &amp;ldquo;We work with governments around the world, and the government of Taiwan suggested that a culinary competition would encourage students to learn more about Taiwanese cuisine. Every student in this cookoff took that challenge very seriously. Although only one student will go to Taiwan, everyone learned a lot, and that makes them all winners.&amp;rdquo;

            <description>Education pioneer in professional culinary nutrition brings industry experience to roleChicago&#45;November 4, 2011&#45;The Kendall College School of Culinary Arts has announced the addition of Chef Eric Stein, MS, RD, to its faculty. As an instructor specializing in culinary nutrition, Stein brings a contemporary cooking style to Kendall that emphasizes nutrient&#45;rich foods and global flavor profiles.&#8220;Kendall College proudly welcomes Chef Stein to our teaching family,&#8221; said Renee Zonka, RD, CEC, CHE, MBA, dean of the School of Culinary Arts. &#8220;He arrives at a time when interest from prospective students in our nutrition concentration has never been higher.
