CHICAGO (May 9, 2013) &amp;ndash; Kendall College School of Hospitality Management launched a new Sports Management Concentration in partnership with Real Madrid, recently listed by Forbes Magazine as &amp;ldquo;the most valuable soccer team in the world&amp;rdquo;, and the Universidad Europea&amp;nbsp; (UE). As the only U.S. academic institution to partner with this world famous organization, Kendall is taking the lead in offering top&amp;nbsp; sports management training to students in Chicago, Illinois, and the nation. The Bureau of Labor Statistics 2012 Occupational Outlook data predicts an increase of 29 percent in jobs in coaching and scouting through 2020, and a 10 percent increase in agents and managers of athletes through 2016. Additionally, there is a 44% projected job growth for meeting, convention and event planners.&amp;nbsp; In Chicago alone, Mayor Rahm Emanuel has made significant investments in Choose Chicago and the Sports Commission.       <title>Kendall College Culinary Arts Students Win American Culinary Federation Regional Knowledge Bowl</title>
            <description>Student team is Central Regional champion of Baron H. Galand Culinary Knowledge Bowl for 4th year in a row
Chicago&amp;mdash;May 6, 2013&amp;mdash; A team of five students enrolled in the Kendall College School of Culinary Arts&amp;rsquo; associate and baccalaureate programs beat nine other teams on April 30 to win the Central Regional Baron H. Galand Culinary Knowledge Bowl at the American Culinary Federation&amp;rsquo;s (ACF) 2013 Central Regional Conference in Little Rock, Ark.
This is the fourth consecutive year that a Kendall College team has swept this annual regional competition to qualify for finals.
This year&amp;rsquo;s team, comprised of Brenda Martinez (captain), Jeremy Noga, Chelsea Parks, Nicole Zapletal and Chris Lutz (alternate), competed against student teams from foodservice&#45;training programs at postsecondary schools throughout ACF&amp;rsquo;s Central Region stretching from Minnesota and Michigan to Texas and Louisiana. As regional champion, the Kendall College team will compete for the national title against the finalist teams representing the ACF&amp;rsquo;s three other regions on July 23 at the ACF&amp;rsquo;s 2013 National Convention in Las Vegas, Nev. Among the four regional finalists, the team with the highest score will be named the national ACF Baron H. Galand Culinary Knowledge Bowl winner for 2013.
&amp;ldquo;We are extremely proud of the students who excelled so admirably in the ACF&amp;rsquo;s Central Regional Knowledge Bowl to earn Kendall College a win for a fourth year in a row,&amp;rdquo; says Renee Zonka, RD, CEC, CHE, dean of the Kendall College School of Culinary Arts, who was on hand in Little Rock along with team coach and chef&#45;instructor Dina Altieri, CEC, CCE, to support the Kendall team. &amp;ldquo;Their hard work and dedication to preparing for this year&amp;rsquo;s competition was remarkable, and competing for the national title in July against other top regional teams will be an exciting and enriching educational experience. We&amp;rsquo;ll be in Las Vegas to cheer them on for a hopeful win.&amp;rdquo;
Kendall College won the national Knowledge Bowl championship at the ACF&amp;rsquo;s annual conventions in Dallas, Texas, in 2011 and Anaheim, Calif., in 2010.The Baron H. Galand Culinary Knowledge Bowl tests the acumen of culinary&#45;arts students via a &amp;ldquo;Jeopardy&amp;rdquo;&#45;style subjects grid that includes challenging culinary, baking, nutrition, sanitation and math questions as well as sensory perception. The competition is named after the late chef Baron H. Galand, CEC, AAC, who served as national president of the ACF from 1983 to 1987. First held at the ACF&amp;rsquo;s 1992 National Convention in Washington, D.C., today the four geographic regions of the ACF hold the competition at their respective conferences in winter and spring to qualify teams to compete for the national title at the ACF&amp;rsquo;s convention in summer.       <title>Kendall College Introduces Home Chef Cooking Classes</title>
            <description>Food Enthusiasts at Every Skill Level Given Unique Culinary Classroom Opportunities
CHICAGO (April 30, 2013) &amp;ndash; Kendall College School of Culinary Arts introduces new Home Chef cooking classes for amateur food enthusiasts.&amp;nbsp; The former &amp;ldquo;Spice Up Your Life&amp;rdquo; program has been re&#45;launched to offer a new recreational cooking experience for at&#45;home chefs hoping to refine their culinary skills and learn from Kendall&amp;rsquo;s experienced culinary faculty. Classes are offered at Beginner, Intermediate, and Advanced levels to provide an exceptional experience for aspiring chefs at every stage of development. &amp;nbsp;&amp;nbsp;&amp;nbsp; In addition, Kendall is launching the Kendall College Home Chef Certificate, an intensive series of non&#45;credit bearing classes for the food enthusiast. The Home Chef Certificate of Participation can be obtained in just under a year with classes held Tuesday and Thursday evenings from 6:30 &#45; 10:30pm, with an optional tutoring day on Wednesday for no additional fee. The classes culminate with all participants preparing a Sunday brunch in the Dining Room at Kendall College for friends, family and the public. A short ceremony will be held to present participants with their Certificate of Participation. Beginner &amp;ndash; Courses such as Step into the World of Julie and Julia and Summertime Pies will teach basic cooking skills from baking cookies and sauce making, to mastering the perfect cheesecake.&amp;nbsp; 
Intermediate &amp;ndash; Classes from Baking and Pastry Techniques Multi&#45;day Class to Ice Cream and Gelato, will help home cooks expand their knowledge and expertise in cooking techniques such as roasting, boiling and braising, while introducing important skills like stir fry and searing. Topics will cover homemade pasta, healthy cooking, international cuisine, and baking and pastry.
Advanced &amp;ndash;Boot camp&#45;style sessions, coach attendees through complex cooking skills including fruit and vegetable carving, international cuisine flavoring and intricate baking and pastry projects. Upcoming courses include Culinary Skills Multi&#45;day Boot Camp and Fruit, Cheese and Vegetable Carving Multi&#45;day Boot Camp. Basic knife skills are required.

      <title>5th&#45;Annual CAFÉ/Kendall College Green Award Recognizes Excellence in Sustainability Education</title>
            <description>Chicago (February 26, 2013) &amp;mdash;The Kendall College School of Culinary Arts and the Center for the Advancement of Foodservice Education (CAF&amp;Eacute;) are accepting applications for the 2013 CAF&amp;Eacute;/Kendall College Green Award. This is the first national award to recognize secondary and postsecondary culinary&#45;arts and baking/pastry programs for their commitment to sustainability. Additionally, the winning program will receive a $1,000 cash prize plus complimentary registration to the 9th&#45;Annual CAF&amp;Eacute; Leadership Conference, June 20&#45;22, in Miami, Fla.
All secondary and postsecondary culinary&#45;arts and baking/pastry programs in the United States, whether diploma&#45; or degree&#45;granting, are eligible. Selection criteria are based on the integration of sustainability into educational programs and/or operations.
&amp;ldquo;Sustainability, once dubbed the &amp;lsquo;wave of the future&amp;rsquo; for the foodservice industry, is the reality today,&amp;rdquo; says Christopher Koetke, CEC, CCE, HAAC, vice president of the Kendall College School of Culinary Arts and Laureate International Universities Center of Excellence in Culinary Arts. &amp;ldquo;Kendall has dedicated itself to sustainability in its classrooms and operations since 2005, and even more gratifying than the value we&amp;rsquo;ve reaped on our own campus has been the privilege of sharing our knowledge with other educators and learning from them. That is the impetus for the CAF&amp;Eacute;/Kendall College Green Award.&amp;rdquo;
According to Mary Petersen, founder and executive director of CAF&amp;Eacute;, the winning program will be selected for its level of innovation; perceived impact on students&amp;rsquo; understanding of sustainability practices and their importance; and the ease with which elements of the winning program can be implemented in similar programs nationwide.
Last year&amp;rsquo;s award went to Seattle Culinary Academy, a division of Seattle Central Community College, for its mandatory coursework in sustainable food&#45;system practices for students enrolled in culinary arts and specialty desserts and breads. Students learn how to plant, tend and harvest 2 acres of donated land, with harvested produce incorporated into menus at school. The school also maintains a plant&#45;science lab/green house, teaches nose&#45;to&#45;tail butchery and food&#45;preservation skills, and operates a GMO&#45;free kitchen.

      <title>Kendall College Announces Beverage Management Concentration, Partnership with Siebel Institute</title>
            <description>CHICAGO (February 25, 2013) &amp;ndash; Kendall College is committed to providing responsible beverage management training for students. As part of this commitment, Kendall is pleased to announce a new concentration in the School of Hospitality Management, Beverage Management, as well as a new relationship with Siebel Institute of Technology. The Siebel Institute will be moving their campus to a soon&#45;to&#45;be constructed modern beverage facility located on the first floor of Kendall College&amp;rsquo;s building at 900 N North Branch Street in Chicago.       <title>Instructor Authors Cooking to the Image: A Plating Handbook</title>
            <description>Chef Elaine Sikorski exposes a chef&amp;rsquo;s beliefs about the power of food&amp;rsquo;s presentation to influence flavor perceptionChicago &#45; January 10, 2013 &amp;ndash; Chef Elaine Sikorski, CEC, CCE, an instructor at Kendall College School of Culinary Arts, is the author of the recently published Cooking to the Image: A Plating Handbook (Wiley, 2012). This is Sikorski&amp;rsquo;s debut publication. Resulting from years of teaching and cooking practice, Plating relates the look of plate presentations to chefs&amp;rsquo; beliefs about food, situated in the larger culinary context. Beginning from a historical menu perspective, the book offers a complete design methodology to plating. Chapter topics include &amp;ldquo;Platter to Plate: Classical Style,&amp;rdquo; &amp;ldquo;Plate Frame: New American Style and Fusion Style,&amp;rdquo; &amp;ldquo;The Emerging Menu: Interactive Table Setting&amp;rdquo; and &amp;ldquo;Design and Culinary Plate Archetypes.&amp;rdquo; End chapters address finding inspiration, critiquing culinary art and culinary values.According to Sikorski, more professional cooks are thinking visually about creating food. To do so successfully, a chef needs to recognize how form and function translate to appearance and flavor on a plate. &amp;ldquo;About 10 years ago, I was teaching plate presentation at Kendall, and realized that I could tell students that something wasn&amp;rsquo;t working, but I couldn&amp;rsquo;t really tell them why,&amp;rdquo; Sikorski says. &amp;ldquo;I couldn&amp;rsquo;t express what I knew.&amp;ldquo;I embarked on an exploration of plate presentations to develop archetypes, and I discovered that it&amp;rsquo;s not just about the presentation &amp;lsquo;working&amp;rsquo;; the plate must also fit a culinary style. To successfully train the cooks of tomorrow, we have to provide them not only with the necessary technical skills to achieve their desired results, but also the ability to recognize previous food styles so that they may develop a strong personal style to express flavor.&amp;rdquo;Cooking to the Image: A Plating Handbook is the result of Sikorski&amp;rsquo;s decade&#45;long exploration and discovery.
