Studying at Kendall in the summer is a rich experience. Beginning in the classroom, your workshop takes you beyond the walls of campus and into the city, with field excursions and opportunities to experience Chicago’s rich culture.

Session dates for each program are listed below. Kendall housing is available for arrival 1-2 days prior to your workshop start and check-out 1-2 days after your workshop ends. Applied Culinary Nutrition

Arrival: July 23, 2017 – Departure: August 5, 2017

You will spend two weeks in Chicago increasing your understanding of applied culinary nutrition while being immersed in American culture. Each day during your three hours of hands-on cooking experiences you will build your understanding of the nutritional needs of the aging, athletes, children, teens and vegetarians. You will learn strategies and techniques to address lifecycle and dietary concerns for people suffering allergies, obesity, heart disease, diabetes and hypertension without sacrificing flavor or food quality. Opportunities for excursions and field trips will be made available to a few of the more than 100 neighborhoods1 that make up Chicago’s food scene, 35 summer food festivals1 and 80 Michelin-recommended and starred restaurants1.

Baking and Pastry Basics – 1 week

Arrival: July 23, 2017 – Departure: July 29, 2017

Think dessert is the best part of the meal? Work in our industrial pastry kitchens and our specialized chocolate and sugar kitchen as you learn the basics of baking like yeast
dough and meringue, to fruit tarts, éclairs, quick breads and cakes. With the advanced workshop you learn how to make delectable mousse-based cakes, ice creams, chocolate
decorations, savarin, molten chocolate desserts and more.

Cake decorating will teach you how to design, frost and decorate cakes using a variety of techniques, recipes, and skills. Basic buttercream, meringues, ganache and rolled fondant styles will be covered. You’ll get lots of practice using various piping skills, building tiered cakes, making royal icing decorations for a variety of modern, round and square cakes.

You can choose one, two or three week workshops, taught by six of our Baking and Pastry instructors, two of our instructors hold the title Certified Master Baker (CMB) 3.

Business in the United States: Culture, Strategy, and Entrepreneurship

2 Workshops Available

Arrive July 9, 2017 – Depart July 22, 2017

You’ll spend two weeks in a workshop that immerses you in American culture as well as American business, strategy and entrepreneurship. Using the Business Model Canvas4, you’ll work in teams as you compete to develop a business concept and pitch your ideas to your workshop instructors, community leaders and investors. Each afternoon you will visit relevant Chicago business or tourist attraction tied to the content of the day. These excursions range from small family businesses to Fortune 500 companies like Google.

Sustainability, Branding and Communication Workshop  – 2 weeks

Arrival: June 25, 2017 – Departure: July 8, 2017

This workshop is open to any Laureate International student, and especially ideal if you are studying Communications, Public Relations/Advertising, Business, Hospitality, Architecture or Engineering.

As one of the world’s most sustainable cities, Chicago is the perfect location to learn about the growing movement toward sustainable business, branding and communication. Visit McCormick Place, the largest and one of the greenest convention centers in North America, view Chicago’s cutting-edge green architecture and tour innovative green hotels. Extracurricular excursions include shopping at the Rosemont Fashion Show Mall, exploring the city’s museums and Lakefront attractions such as Navy Pier, enjoying the celebrated theater district, and dining at Chicago’s many green-certified restaurants.

1-2 days prior to session start: Arrival/Check-in to housing
1-2 days after session ends: Check-out of housing

Application and payments are due no later than 30 days prior to start. Payment in full through credit card or wire transfer. All workshops are taught in English.

ACCOMMODATIONS

Enjoy living in downtown Chicago at one of Kendall’s contracted housing facilities. We partner with university apartment buildings located near Chicago’s Magnificent Mile. Each apartment includes double occupancy bedrooms and bath, kitchen and living room, accommodating up to six students per apartment. Building facilities
and amenities include a gym, 24-hour security, laundry room, rooftop deck and spectacular views of the city. Workshop attendees are responsible for keeping their Kendall Housing clean and tidy. Any attendee who leaves their apartment in poor condition will be charged a onetime $250.00 USD cleaning fee.

Kendall Student Life will provide you with bed linens and bath towels.
